Here's another one that is kind of cool.  In this one, the letters are scrambled except for the first and last letters.  This was an experiment done at a college, but it would make a great science fair project too.

This theory about the mind fixing words by unscrambling the letters probably doesn't work well when the scrambled letters create a real word or get more complicated just because of the length of the word.  Like this:

A dootcr has aimttded the magltheuansr of a tageene ceacnr pintaet who deid aetfr a hatospil durg blendur.
